Happy Thanksgiving..a little late.
In honor of Gettysburg Creamery's newest product, Cultured Buttermilk, I have a fabulous and easy recipe for Blueberry Buttermilk Coffee Cake, I hope you enjoy it - our kids certainly did!
Blueberry Buttermilk Coffee Cake
1 cup butter
2 tsp. lemon extract
1.5 cups sugar
2 tsp vanilla
4 cups flour
4 tsp baking powder
1/2 tsp salt
3 cups blueberries
1 cup Gettysburg Creamery Buttermilk!
Preheat oven to 350 degrees, Grease 9 x 13 pan.
Cream butter, lemon and sugar. Beat in eggs and vanilla.
Stir 1/2 cup flour into blueberries and set aside.
Beat salt and baking powder into butter mixture, then alternate adding flour a little at a time and then the buttermilk a little at a time until everything is incorporated.
Blend in the blueberries.
Bake for 30-45 minutes until a toothpick inserted in the middle comes out clean.
